Shechita

Shechita - ritual slaughter of animals and birds involving swift throat cutting and bleeding the animal. One of the essential principles of the Jewish dietary rules without which meat does not comply with the laws of kashrut. The ritual slaughter is conducted by a shochet (shochet) - a male adult Jew, approved for this position by rabbinic authorities. The blade used for slaughter must be perfectly smooth, any notches can render the shechita invalid. Before cutting the throat, the shochet recites the blessing. Internal organs are examined for symptoms of diseases, damages etc., the parts considered to be non-kosher are separated.
